Poultry
This is one tried but true mainstay. It is full of carrots, peas, and of course chicken all under a tender crust. What a great way to end a hectic day!
The longer this chicken marinates the better. This is a grill ready
entrée to top a Ceasar Salad or alone as your main course - or, if you prefer, we can broil it and you can heat it up.
Very traditional but always a great treat. Serve it with my homemade garlic bread and a large tossed salad - yum!
These hens are coated inside and out with a mixture of herbs and seasonings then slow cooked to keep all their juices inside.
Have you ever had chicken salad with grapes and walnuts? Well, if you haven't, your missing something. This cannot go in the freezer, but it is so yummy that it will not last.
These foil bundles are great. Chock full of spinach, olives, onions, sundried tomatoes, garlic and feta cheese all married with white wine and herbs. Place them on the grill or in the oven - toss away the foil and you are all cleaned up!
My Mother is from the South and would pan fry chicken for us and now I'll do it for you. Serve it up with green beans, mashed potatoes, biscuits and gravy - now that's Southern Comfort food!
Homemade chicken tenders - your children are going to love them. What is even better is they can heat these little morsels up for themselves.
Chicken sautéed with mushrooms, dill weed, lemon juice and spices, serve over rice and dinner is on the table.
Boneless chicken breasts slow simmered in a raspberry balsamic vinegar base - wonderful.
What a great dish for something a little different. This can also be wrapped in a puff pastry for an elegant presentation.
Tender chicken medallions sautéed with pecorino crust and drizzled with a light light lemon sauce. Serve with either pasta or a crisp green salad and some garlic bread.
Amazingly enough this can be made very low fat. This is great served with rice pilaf, asparagus and cashews.

Beef
These little gems are great all by themselves - but team them up with a creamy horseradish sauce and you have a killer entree.
This is a different twist from the marinated london broil. Fresh herbs are rubbed into the beef, it is then seared and baked to your desired degree of doneness. To serve, top with a dollop of garlic butter sauce and team it up with a fresh baked potato and a steamed veggie of your choice.
You pick the cut of meat and I'll fix the marinade. This is also a grill ready
entrée, the marinade is absolutely wonderful - great for a summer night.
This is a crock pot dish that is wonderful for a dinner after you get home from your kids' games. Served it a bun with lettuce and tomato, accompany your sandwich with coleslaw, chips and some fresh fruit - what a great way to hit the spot after being out in the fresh air all day.
This is a crock pot meal with - can you believe it - bloody mary mix and red wine. This is a great meal that has all the veggies in it so you're ready to go when it is convenient for you. I'll make sure I provide plenty of crusty bread to get all the leftover juices.
Wonderful! Serve with salad or steamed broccoli and garlic bread and you have a great meal.
Wow - these taste good just reading the name of the recipe. Suggested sides are honey mustard sweet potatoes and stir-fried mushroom medley.
There is nothing like roasted red peppers, they are so sweet and full of flavor, pair them with a rib-eye steak and you have meal that is awesome - not to mention it is low fat!
If you like peppers you will love these. They are stuffed with ground beef or turkey, veggies, fresh herbs and topped with some cheese. Actually, peppers are good stuffed with most anything - let me know and we will experiment.
This is really different - ground beef rolled like a jelly roll with ham and mozzarella cheese inside. This is a winner - kids love it.
Imagine eating a sloppy joe that is not sloppy. These squares can be picked up like a brownie and not drip everywhere.
This is another kid favorite. An inside-out pizza cut into slices. Serve it up with a salad and you've got a meal.

Pork
I served this to my family for my mom's 85th birthday party - absoutely wonderful, not a chop was left.
Believe it or not but this is a Weight Watchers recipe so you do not have to save your points to have a great
entrée.
You do not need a grill to have great ribs and these prove it. Slow cooking is the trick and boy they are worth the wait.
Pork tenderloins are great - not only are the low fat they are versatile. This tenderloin has quite a kick to it and is served with a lime infused Basmati rice.

Seafood
Absolutely delicious. One mushroom makes a meal. Add a side salad and some crusty bread and your tummy is happy.
Just like you had growing up (in Maryland). Light and creamy without filler and overpowering flavors, just the delicate taste of crab.
Whether you use flounder, perch or tilapia these little morsels are great. Broiled to perfection, the flavor of the parmesan with a hint of lemon is delicious. Accompany this with rice pilaf for a great combo.
A client asked if I could find a recipe to make this, and boy did if find one. The flavors in this chowder are wonderful and with a touch of sweet red peppers it looks great. Serve it up with crunchy bread and a salad - wonderful.
Diced tomatoes, carrots and green onions flavored with lemon and white wine and placed on top of Orange Roughy. Incredibly low fat with tons of flavor.
